It is difficult to think of my life in Italy without thinking about espresso (caffe). It is a part of our natural culture. Every morning I would wake to the wonderful scent of my mother working the caffeteria (a steel maker put on top of the stove).

It was the tradition in our family to have dinner as as family. Every Sunday we would have a big meal which included my grandparents. The first time I was allowed to help in the kitchen was when my grandmother let me finish the meal. No family meal was ever completed without the finishing touches of an espresso. I remember my grandfather shouting for "Corretto, bring me a corretto". My grandmother taught me how to make this special drink. She made the espresso making sure that the crema (the light-colored foam on the surface) was perfect. She would bring this to my grandfather and then I was given a bottle of grappa to parade out to the table. I was told to put a splash of it into the espresso. This "corrected" espresso was now ready for drinking. The beauty of this Italian lifestyle is the wonderful way you can use these internal ingredients internally.
